Dating Bacon Jam - a cook off

I just found ^this^ quirky Bacon Jam recipe, I had to post up, just in case you're a bacon addict as I am. Yes I agree bacon is the root of all evil. I call myself a non-practicing vegetarian because of bacon, 90% of my daily food intakes is vegetarian if not 100%, for health reason and for the cute animals out there. However I am human and have many weakness, bacon is one (I have many many many more), so going back to the recipe, I am going to try this out this weekend, I am just too curious! I can also imagine it as a perfect condiment for a non vegetarian salad sandwich (-huh?!). I will let you know how it goes!

In the meant time I totally am obsessed with these Date Crumble Slice recipe. So easy to make I found it on www.taste.com.au , but I changed the ingredients up for my liking.

Ingredients :

  • 2 cups chopped pitted dates
  • 1 cup water
  • 185g butter, chopped
  • 1 cup brown sugar
  • 1 1/3 cups wholemeal flour
  • 1/2 teaspoon bicarbonate of soda
  • 1 1/2 cups granola or muesli
 Method :
  1. Preheat oven to 180°C. Grease and line a 3cm deep, 20cm x 30cm (base) lamington pan.
  2. Combine dates and water in a saucepan over medium heat. Cook, stirring, for 10 to 15 minutes, or until dates have absorbed liquid. Set aside to cool to room temperature.
  3. Cream butter and brown sugar until light and fluffy. Sift flour and bicarbonate of soda over butter mixture. Stir until well combined. Add granola or muesli. Mix well. Press half the mixture into base of prepared pan. Spread date mixture over the top.
  4. Crumble remaining granola/muesli mixture over date mixture so dates are completely covered, pressing on with your fingertips. Bake for 35 to 40 minutes, or until golden. Cut into slices. Serve warm or cold.
 ...and ta-da! I just wrapped them up individually with baking paper for keeps sake. I will be making plenty more in the future so if you're within a tea or coffee meeting distance, don't be surprise Mr Date slice might just show up!
